POSITION SUMMARY

This full-time salaried position is the kitchen manager during all closing and opening shifts in the kitchen and will ensure that all food production areas have kitchen management and supervision.

Essential Functions Statement(s)

·        Supervision of all areas of the kitchen and manage back of house (BOH)

·        Ensure that all food production areas (Vintage House and any other catering location) have kitchen management and supervision

·        Ability to work weekends, holidays, etc. opening, mid, and/or closing shifts

·        Ensure all food production meets the standards set by Messina Hof

·        Ensure all recipes and standard operating procedures set by Messina Hof are followed

·        Ensure that a high quality of professionalism is maintained at all times, and that kitchen staff is   professional and maintains a good, positive working relationship with all Messina Hof guests, management and employees in and outside the department

·        Maintain a high level of safety awareness in kitchen areas through proper training and supervision of staff

·        Maintain a high level of sanitation in kitchen areas (as set by VH/DE Manager)

·        Ensure that all opening and closing duties are followed as set by management

·        Maintain a low amount of waste through proper training and supervision of line and prep cooks

·        Run kitchen efficiently with regards to ala carte business or special events and must be able to

·        perform this requirement without direct supervision

·        Directly responsible for all aspects of the Vintage House Kitchen Operations (with VH/DE

Manager’s approval) to include but not limited to:

o       Properly cost out daily specials and menu items

o       Inventory (monthly)

o       Weekly ordering

o       Employee evaluations

o       Menu writing

o       Employee schedules

o       Health Department inspections

o       Assist with Designer Events and in-house events as needed

o       Act as Department Manager in the absence of Executive Chef

o       Conduct monthly inspections of kitchen areas with VH/DE Manager

·        Other duties as required

 

POSITION QUALIFICATIONS

Competency Statement(s)

·        Related degree and/or 3-5 years of related experience.

·        Ability to use a personal computer.

·        Previous kitchen management experience preferred.

·        Ability to use kitchen equipment safely

·        Ability to read and follow a recipe

·        Need to have Food Handler’s Certificate and Kitchen Manager’s Certificate

 

PHYSICAL DEMANDS

While performing the duties of this job the employee is regularly required to talk or hear.  The employee is frequently required to stand and walk for long periods of time.  The employee is occasionally required to reach with hands and arms and stoop, kneel, and crouch.  The employee must frequently lift and/or move up to 50 pounds from floor to waist.  Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
