Sodexo has an excellent opportunity for an Executive Chef at an upscale Continuum of Care Retirement Community just blocks from the heart of Claremont, California. This 30-acre campus supports the diverse interests of the community?s 480 plus residents. The Executive Chef will be responsible for managing and directing day to day culinary operations and food production. Food service operations include high end catering, multiple dining rooms and construction of two new ?Green House? models that will house 24 residents, which is set to open in two year. The ideal candidate must have a minimum of 10 years? experience in the culinary field, be a team player and demonstrated ability to drive the culinary business through spectacular food production, creativity, and innovation. Exceptional leadership and team building skills, along with strong interpersonal skills and the ability to interact with residents and all levels of management are essential. Position Summary : Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
