Executive Chef – Japanese

This amazing Japanese restaurant based in central London is looking for an executive chef to run the kitchen on a day to day basis.

The restaurant is part of a small group and is the flagship site. As executive chef, you will be responsible for running the kitchen to the highest possible standards and making sure that every plate is served to the exacting standards of the company

You will be responsible for training, developing and motivating the team. You will be responsible for food stock control and ordering. You must be able to manage a large team of 30 chefs and be used to dealing with all aspects of kitchen management. This will include menu planning and costing, working to a tight GP, ensuring the kitchen team is following HACCP and COSHH procedures, compiling staff rotas, cleaning schedules and hiring of new staff members.

As an executive chef for this role you should have experience iin running a high volume operation of around 500 covers per day. You should be passionate about the food that you are serving, you should have excellent people management skills and be able to work to tight deadlines. Experience in Japanese or oriental cuisine is advantageous but not essential.

The salary on offer is up to £38000 with bonuses and benefits
