POSITION SUMMARY
The Retail Manager oversees the daily operation of the dining room and ensures that quality nutritional food is provided to all customers and that professional standards are met and maintained in the department.
ESSENTIAL FUNCTIONS / STANDARDS OF PERFORMANCE:
The position functions and duties described below may not be the only requirements of the position. It may be necessary to follow other instructions or perform other related duties required by Valley Services Inc.
· Oversees service to all customers to ensure high quality and delivery according to the established schedule
· Ensures serving line and self-service areas maintain high quality levels in cleanliness presentation and food temperatures
· Assists Chef Manager daily with menu selections and menu item changes
· Oversees dining room décor and cleanliness
· Assists with maintaining the personnel and training functions of all assigned employees
· Utilizes customer comments cards on daily basis for feedback regarding quality of food and service; takes appropriate actions on comments
· Assists the Food Service Director with conducting physical inventory on a weekly basis
· Monitors inventory and places orders utilizing quantities on hand
· Completes an assessment and performs training with kitchen personnel in sanitation practices and establish cleaning schedules and other sanitary controls as required by the county and or state health department and Valley policy
· Assists with maintaining the highest rating on health inspections and corrects any deficiencies
· Completes projects and functions designed to meet annual objectives as indicated by the Food Service Director Valley Management and Valley’s business plan budget and strategic initiatives
JOB QUALIFICATIONS
Education/Experience:
A minimum of two (2) years in food service management with experience in “front of the house” management required. Must have experience in food cost management and cash handling. Must have experience in quality control. Must have computer experience using Microsoft Office software (Word Excel) including the use of internet and electronic mail systems. Experience practicing proper safety standards in handling food and equipment required. ServSafe certification required. Preference: Bachelor’s degree in food service management nutrition science dietetics business or related field preferred. At least one (1) year catering experience preferred. At least one (1) year experience in menu development preferred. Production management experience preferred. Knowledge of merchandising techniques and “special events” within a food service setting preferred.
