Chef Manager APEX Loading map ... Sodexo has a great Chef Manager position available! This site is a small, busy business dining account located in Durham, NC. The unit is part of a large, national account in Corporate Service Solutions. The Chef Manager will supervise staff of three in a corporate cafe with coffee service. The Chef Manager prepares entrees and oversees all food production. Orders, stores and inventories all food and supplies. Establishes all food consumptions estimates. Maintain HACCP records for hot food and files all HACCP records. Maintains kitchen and service area in accordance with sanitation policy. Completes all financial recording. Completes all required audits and monthly staff training. Monday - Friday with occasional weekend work. The ideal candidate will have the following preferred experience/skills: Strong catering expertise Excellent communication skills Familiarity with Web UFS or similar web based financial software and online ordering systems Solid foodservice background to include BOH and FOH management Supervises cooks and oversees the preparation, portioning, garnishing, and storage of food. Estimates food consumption and purchases food. May assist in cooking and preparing food as necessary. Responsible for maintaining kitchen and storage facilities in sanitary condition. Responsible for cash management. Interacts with client/customers on a regular basis. This position is the leader for an account/unit chef/production group. This position is in smaller accounts/units where there is not a Chef or Food Production Manager. Reports to GM. Basic Education Requirement - Technical, Trade, or Vocational School Degree Basic Management Experience - 1 year Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc. Sodexo will require a background check and may require a drug screen for this position.
