Cook / Sm-Lrg Unit

PRIMARY JOB FUNCTION:
Provide guest service and meals that satisfy and exceed our guests expectations. Sr Sous Chef is responsible for assisting the manager and/or Chef with all back of the house operations. Consistently maintaining the use of high quality products, monitoring recipe usage and portion control, menu planning and ordering, ensuring high levels of safety and sanitation are met.

CORE JOB RESPONSIBILITIES:
Responsible for compliance with applicable Corporate and Divisional Policies and procedures.

Planning Organizing - includes daily production, work assignments, menu planning and ordering. Provides support to all areas of the unit regarding food handling and production issues.
Records Documentation - includes production reports, time temp logs, cooling logs, GFS invoice report, updating order guides and maintaining recipe files. Gives recommendations to Corporate Chef regarding production corrections and future new concepts.
Supervision - includes training, coaching, and work assignments. Leads others to adhere to basic policies, practices and procedures. Is involved in the overall management of the unit. Monitors food production and corrects improper procedures when necessary.
Communication - includes confirming orders, addressing customer concerns, returning calls, e-mails and voice mails. Communicates with
kitchen staff, catering staff other team members in a professional manner.
Cost Control - includes portion control, pre-service meeting, recipe development, usage of leftovers and reduction of waste, controlling inventory and making adjustments as needed. Exercise wise and prudent knowledge to contribute the profitability of Abbott.

POSITION ACCOUNTABILITY / SCOPE:
Position reports to Unit Manager and indirectly to 1st Chef. Customers are Abbott employees. Individual must excel in production organization and have outstanding customer service skills.

Basic Qualifications:
5 years culinary experience with thorough knowledge of cooking principals and visible supervisory skills. Sanitation Certification necessary.
